     Breakfast hashbrowns

Ingredients
4 potatoes
1/2 yellow onion
1/4 bell pepper
bacon grease
salt
pepper
Cavendars seasoning
you can add cooked bacon or ham if you want
 

Instructions
Shred potatoes in a food processor if you can. If not, dice very small. Place shredded potatoes in a colander and rinse thoroughly with cold water. Allow to drain completely.
Heat bacon grease in an iron skillet on medium high heat. Do not add potatoes until pan is hot! Place shredded potatoes in skillet, season with salt, pepper, and Cavender's seasoning to taste. Cook, turning occasionally, as potatoes on the bottom brown.
Try not to over turn the potatoes or they will turn to mush. Potatoes should have enough oil to appear wet or glistening while cooking. Cook for ten minutes then add onions, bell pepper, and meat if you're using it. Cook until potatoes are tender and browned.
