     cooking for 2- chili

Ingredients
1 small onion
3 garlic cloves
1 1/2 tsp chili powder
1 tsp ground cumin (can omit if you want)
3/4 tsp ground coriander
1/4 tsp chili flakes
1/4 tsp dried oregano
salt and pepper to taste
1/8 tsp cayenne pepper
 
1-14.5 ounce can of tomatoes
12 ounces of ground beef (can use turkey /chicken instead for a leaner version)
1 - 8ounce jar of tomato sauce
3/4 cup kidney beans
Some people put in white beans as well (if you like them go ahead)

Instructions
Heat oil in a medium size sauce pan until shimmering. ADD the onion, bell pepper, chili powder, garlic, cumin, coriander, pepper flakes, oregano. 1/4 tsp salt and cayenne. Cook stirring often until the vegetables are cooked and the spices are fragrant 3-5 minutes
Add the ground beef, breaking it up as it cooks. once it is no longer pink, add the tomatoes and their juices, the tomato sauce and the beans.
Cover and reduce , simmering on medium low for about 30 minutes. Uncover and simmer another 15 minutes or until the chili has thickened.
season with salt and pepper to taste.
