     Bij’s Bread

Ingredients
4 cups water
2 tbsp salt
1/3 cup sugar
1/3 cup shortening
1/2 cup milk powder
Pinch ginger
Dash lemon extract
8-10 cups flour
Yeast-2 tbsp or 1/4 brick bakers yeast
 

Instructions
4 loaves 375 25-35 minutes. Test for doneness
Shortcut 2 cups water, 2 tbsp salt, 1/3 cup sugar, 1/4 cup oil (instead of shortening) in a bowl then sprinkle yeast overtop then dump other 2 cups water on top. Let rise in mixer bowl til yeast is bubbly then dump in 5 cups flour, mix, add more flour 1 cup at a time. Optional - add eggs, 1 egg per 2 loaves
