1 Can, 16 oz. whole tomatoes (or tomatoes with garlic and oregano)
3 Cups water
2 tsp. dried oregano
1/2 tsp. dried thyme
1/2 tsp pepper
1 Cup uncooked spiral macaroni
2 small to medium potatoes, peeled and cut into 1/2 inch pieces
1 can, 20 oz., cannelloni beans, drained
1 small zucchini, peeled and thinly sliced
Parmesan cheese for garnish
Instructions
Cook and stir onion, garlic and ham in oil in a dutch oven oven on
medium heat until onion is very tender, about 10 minutes. Stir in
tomatoes with liquid, water, oregano, thyme and pepper. Break up
the tomatoes with fork.
Heat to boiling. Stir in potatoes and reduce hea and cook about 10
minutes. Cook the noodles separately, rinse and set aside.
Into dutch oven stir in beans and zucchini. Cook just until zucchini is
crisp-tender, about 3 minutes. Add noodles separately to each bowl
and ladle soup over them. Sprinkle with grated Parmesan.
