     One pot beef and black bean chili

Ingredients
2 small yellow onions
2 jalapenos
1.5 pounds ground beef
1 tsp garlic powder
1 tsp chili powder
1 tsp cumin
6 tbsp tomato paste
2 cans diced tomatoes
2 cans black beans
 
2 packets beef stock concentrate (i use savory choice from amazon)
4 tbsp sour cream
2 tsp hot sauce (tobasco etc)
1/2 cup monterey jack cheese

Instructions
Halve, peel, and dice onion. Thinly slice 1 jalapeno. Core and deseed second jalapeno, then mince. Heat a drizzle of oil in a medium pot over medium high heat. Add onion and minced jalapeno, season with salt and pepper. Cook until softened, 5-7 minutes. Add ground beef, garlic powder, chili powder, and cumin. Cook, breaking up meat into pieces until browned, 5-7 minutes. Season with salt and pepper.
Stir tomato paste into pot. Cook, stirring, until dark red and combined, 1-2 minutes. Add tomatoes, black beans, stock concentrate, 1/2 cup water, salt, and pepper. Stir to combine. Bring to a simmer and cook until thickened, about 10 minutes.
In a small bowl combine sour cream, hot sauce, and 1-2 tsp water. Season with salt and pepper.
Divide chili among bowls, top with cheese, crema, and as much sliced jalapeno as you like.
