     Meatballs - Quick and Simple

Ingredients
2 large eggs
1 Tbl. melted butter
1 small onion, finely chopped
1-1/3 Cups breadcrumbs
2/3 Cup Grated Parmesan
2 garlic cloves, minced
2 tsp. Italian seasoning
1-1/2 tsp. salt
1/2 tsp. pepper
 
2 lbs. ground beef

Instructions
Preheat oven to 375 deg. In a large bowl, combine all ingredients except beef. Mix well. Then crumble in the beef and mix well again.
Shape into 1-1/2 inch meatballs. Place on a greased rack in a shallow baking pan. Bake, uncovered, 15-18 minutes.
To freeze, Place cooked meatballs into a freezer container. To use, partially thaw in refrigerator overnight. Heat through in the microwave.
I let these warm up in spaghetti sauce for spaghetti and meatballs or meatball sliders. They could handle a little more italian seasoning. I also made these with a 12 oz package of plant-based beef. They were good. Made 17 meatballs from one package.
