     Spinach Artichoke Pasta Bake

Ingredients
8 oz pasta, cooked al dente
2 Tbs. olive oil
1 onion, chopped
2 cloves garlic
1/8 tsp red pepper flakes
10 frozen chopped spinach, thawed and drained
1 cup whole milk with 1 Tbs. cornstarch
1 cup heavy cream
1/2 cup sour cream
 
1/2 cup parmesan cheese, grated
14 oz artichoke hearts chopped roughly
1/2 tsp salt
1/4 tsp pepper
1 cup shredded mozzarella cheese

Instructions
saute onion in olive oil, add garlic, saute 1 minute, add spinach, stir in. add milk with cornstarch, cream, and sour cream and parmesan, stirring while it thickens. Add artichokes, salt and pepper.
Meanwhile, prepare pasta. Drain, pour into cooking dish, stir in sauce and top with mozzarella. Bake 25 minutes at 350 degrees until lightly browned.
