4 boneless, skinless chicken breasts
2 tsp. Italian seasoning
1 tsp. paprika
1/2 tsp. garlic salt
1/4 tsp. black pepper
3 Tbsp. olive oil
For filling-
1- 10 oz. bag frozen chopped spinach (thawed/squeezed)
or cook down raw spinach and chop
6 oz. cream cheese (softened)
1/2 c. grated parmesan cheese
1/2 c. grated mozzarella cheese
1 Tbsp. minced garlic (1 garlic = 1 tsp.)

Slice breasts 3/4 of the way through to make a pocket. Season the chicken with seasonings.
In a bowl, combine all the filling ingredients and mix well. Salt and pepper to taste. We cooked the spinach down and patted the moisture out of it. Then chopped it.
Stuff each breast with spinach mixture equally and secure with toothpicks.
Brush oil on chicken and bake at 375 for 30 minutes or until chicken is cooked through.
