     Caprese Stuffed Chicken

3 thick chicken breasts
ball fresh mozarella cheese
18-24 basil leaves
10-15 grape tomatoes
2 tsp olive oil
Italian seasoning
salt and pepper

Preheat oven to 400. Using a sharp knife, cut slits across the chicken breast 3/4 of the way through. Make about 6 to 8 slices approx 1 inch apart (hasselback style)
Slice mozarella ball. Cut grape tomatoes in half. Remove basil leaves from stems. Stuff each slit with a slice of mozarella, half a grape tomato and a basil leaf.
Place chicken in a baking dish. Brush each chicken breast with olive oil. Sprinkle with Italian Seasoning, salt and pepper to taste.
Bake in a 400 degree oven for 30 to 40 minutes or until internal temp of chicken is 160 degrees.
