3 lbs unpeeled new potatoes
|
|
2/3 cup mayonnaise
|
|
1 (8 oz) container sour cream
|
|
2 Tbsp fresh dill, chopped
|
|
2 Tbsp onion, grated
|
|
2 Tbsp fresh parsley, chopped
|
|
1 tsp salt
|
|
1/2 tsp fresh black pepper
|
|
Garnish with dill
|

|
|

Instructions |
|
|
Cook potatoes in boiling, salted water 14-15
minutes or until tender, drain potatoes and cool
to touch.
|

|
Cut potatoes into quarters or eighths, leaving
skins on, place in a large bowl.
|
|
|
Combine mayonnaise and next 6 ingredients in a
small bowl. Add to potatoes and toss gently.
|
|
|
Serve immediately or cover and chill up to 8
hours. Garnish with dill.
