Make one cut to the center of a 10 inch tortilla.
Spread refried beans to the left of the cut on 1/4 of the tortilla.
Put the scrambled eggs, tomato and scallions on the quarter
above. Put the shredded cheese on the top right and pepper
and onions on the final quarter.
Fold by quarters clockwise. Beans to eggs to cheese to
peppers and onions.
Grill on both sides until warm and crispy.
