Preheat oven to 450 F
Cube salted pork fat. If very salty, boil for two minute’s to
reduce salt. If just bacon, fry until crispy. Like a scrunchion.
Drain on a paper towel.
In a large bowl, whisk together eggs, milk, flour, and lemon
zest.
Place butter in a 3 quart pan and place IN oven until butter
melts. Swirl around to coat the bottom of the pan. Pour in mix
and spread bacon evenly on mix. Put in the oven and bake for
20 minutes until golden brown.
Whip cream, some sugar and vanilla together.
Remove pancake from the oven, sprinkle some icing sugar
over the dish and serve with whipping cream and preserves
(or fresh berries). Serve warm.
