     (C) Dijon Chicken Thighs

Ingredients
1 tbsp olive oil
4 chicken thighs (skin on, bone in)
1/4 cup chopped onion
3 cloves minced garlic
1 tsp thyme
1/2 cup chicken stock
1/4 cup heavy cream
2 tbsp dijon mustard
salt/pepper
 

Instructions
Season thighs with salt and pepper then fry in skillet with oil, skin side down until skin is brown. Then flip and fry until cooked. Set chicken aside then add garlic, onions, and thyme and saute until onions softened. Add chicken stock and simmer for 5 minutes. Add cream and mustard and add salt as needed. Serve over chicken.
