In a large bowl, mix flour and salt and set aside
In a glass measuring cup, mix the warm water and honey or sugar, once dissolved, add the yeast and allow to sit for a few minutes, until foamy.
Stir the yeast mixture into the flour slowly until a sticky dough forms. Add the 2 tbsp olive oil and another 1/4- 1/2 c of flour if needed to create the dough.
Coat a large bowl with olive oil and fold the dough into a ball and place in the bowl. Coat the surface of the dough with olive oil and wrap with plastic wrap and refrigerate for at least 8 hours.

Remove the bowl from the refrigerator and place the dough on a baking sheet lined with foil and sprayed with olive oil. Cover with plastic wrap and a towel and allow to rise for 2-3 hours.
Heat the oven to 450F
Remove the towel and plastic wrap after 2-3 hours and poke holes in the dough with your clean finger to create the dimpling.
Lightly coat the dough with olive oil, lightly salt with sea salt and sprinkle herbs on top.
Place the dough in the oven at 450F then turn down to 425F and bake until lightly brown, about 22-30 minutes.
