     Charred paneer and green beans

Ingredients
Spice rub
1 tbl each of salt, garlic powder,onion powder
1 tbl paprika
1 tsp ground cumin
1/2 tsp cayenne pepper
1 tsp sugar
Beans and assembly
Juice of 2 lemons
 
4 tbl olive oil divided
1 lb mixed summer beans. I liked the long green beans
2 6oz slabs of paneer
coarsely chopped roasted pistachios

Instructions
Mix all ingredients together for spice rub. Set aside
Whisk lemon juice with 2 tbl olive oil and 2 tbl spice rub. Set aside
Place beans in a large bowl, drizzle with 2 tbl olive oil and toss to coat. Sprinkle with 1 1/2 tbl spice rub. set aside
Place paneer on a plate. drizzle with 1 tbl olive oil and rub all over with spice rub, set aside Heat grill . Grill paneer on all sides until golden brown. Transfer to a platter. Place a small grilling rack on grate and heat 5 minutes. Arrange beans in a single layer on rack and grill, turning occasionally until tender and blistered. Slice cheese onto platter, top with beans drizzle with dressing and top with pistachios. DELICIOUS!!
