     Smokey Potato & Kale Soup

Ingredients
1 tablespoon olive oil
3/4 lb smoked spanish chorizo, regular chorizo or smoked sausage
1 yellow onion, chopped
6 cloves garlic, chopped or grated
2 teaspoons smoked papriks
1/4-1/2 teaspoon cayenne pepper
4 small yukon gold or russet potatoes chopped
6-8 cups low sodium chicken broth
juice of 1 lemon
 
kosher salt and black pepper
4-6 cups curly kale roughly chopped
1/4 whole milk or cream
1/4 cup cheese, sharp, cheddar or parmesan

Instructions
Heat the olive oil in a large butch oven over med hight heat. Add chorizo and onions and brown 5-8 min. add the garlic, paprika and cayenne and cook another 2 min. stir in potatoes, toss to coat.
Add the broth and lemon juice and season with salt and pepper. Simmer over med heat 15-20 min until potatoes are tender. Remove 1/2 the potatoes from soup and smash or puree them in blender and put back into soup along with kale, milk and cheese. cook 10 min until kale is wilted about 10 min. remove from heat.
