     Seafood - Blackened

Category   Entrees - Maindishes
Sub Category   None

Ingredients
SEASONING MIXTURE -
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1 tsp. paprika
1/2 tsp dried thyme
1/2 tsp. dried oregano
1/4 tsp. garlic powder
1/4 tsp. onion powder
1 tsp. kosher salt

FOR THE FISH -
2, 8 to 10 oz fish filet
2 Tbl. Avocado oil
1 lemon cut into wedges
fresh parsley, optional for garnish

Instructions
In a small bowl combine all of the seasonings. If your filet has skin, generously coat the flesh side with the seasoning mixture. If there is no skin, then coat both sides of the fish with seasoning.
Heat oil in a large skillet over medium-high heat. When oil is simmering, swirl the oil so it coats the pan. When very hot, place the fish flesh side down and cook, without touching, until a dark brown or blackened crust forms and fish is almost cooked through, about 6 minutes.
Flip the fish and press down with a spatula. Continue to cook about 3 more minutes until fish flakes easily. Serve with a wedge of lemon and parsley.
Pretty Good!
