     Apple, Brie and Beer soup

Ingredients
3 tbl salted butter
2 tbl extra virgin olive oil
1 small onion, chopped
2 tbl fresh thyme leaves
1 tbl chopped fresh sage
1/4 C all purpose flour
2 C whole milk
2 C chicken broth
1 12 oz bottle pumpkin beer
 
1/2 C apple cider
1 honeycrisp apple chopped
3 Cups shredded sharp cheddar cheese
4 oz creamy brie cubed
1/4 tsp cayenne
1 large pinch salt and pepper
optionals. croutons, honey, soft pretzels

Instructions
Melt together the butter and olive oil in a large pit over medium heat. Add the onion, thyme and sage. Cook until fragrant about 5 minutes. Whisk in the flour and cook until golden about 1 minute, gradually whisk in the milk until smooth. Add the broth, beer, cider, apple and a large pinch each of salt and pepper. Bring to a simmer, reduce the heat to medium and cook, uncovered about 15 minutes
Remove the soup from the stove and puree in a blender or use an immersion blender. Return the soup to the stove and set over low heat. Stir in the cheddar cheese and brie until melted and creamy. Add the cayenne
Ladle the soup into bowls and top with a little extra cheddar and fresh thyme. Serve with soft pretzels on the side or top with croutons and drizzle with honey. This is a delicious filling soup!!
