     Pork - Mandarin Pork Stir fry

Cooked rice
1 Tbl. cornstarch
1/2 tsp. garlic powder
1/2 tsp. ground ginger
1/2 Cup orange juice
1/4 Cup water
2 Tbl. Soy sauce
1 lb. pork medallion, cut into 2 inch strips
2 Tbl. canola oil
14 oz. pkg. sugar snap peas
11 oz. can mandarin oranges, drained
Optional -
Raw shrimp

In a small bowl, combine cornstarch, garlic powder and ginger. Stir in orange juice until smooth. Stir in water and soy sauce. Set aside.
In a wok, stir fry your vegetables until tender. Stir in pork for 2 minutes, then add shrimp (if using), for another 3 minutes.
Stir in orange juice mixture. Cook and stir for 2 minutes until the sauce has thickened. Gently stir in oranges. Serve with rice.
