     Zucchini Parmesan Crisps

2 medium zucchini (about 1 lb. total)
2 Tbl. olive oil
1/2 Cup grated Parmesan
1/2 Cup plain bread crumbs
1/4 tsp. salt
black pepper

Preheat oven to 450 deg. Coat baking sheet with cooking spray. Slice zucchini into 1/4 inch rounds. In a medium bowl, toss the zucchini with oil.
In a small bowl combine Parmesan, bread crumbs, salt and pepper. Dip each round into the mixture, coating evenly and place on prepared sheet. Bake until browned and crispy, 25 to 30 minutes.
