In a small pan, melt butter and blend in flour. Then
slowly add the milk, whisking to blend. Season with
salt and cayenne pepper.
Cook sauce on low until smooth and simmering. Reduce
heat and stir in 1 Cup cheese. Place half of the
potatoes into a lightly greased 1 quart casserole
dish. Pour half of cheese sauce over potatoes.
Repeat with a second layer.
Sprinkle the remaining cheese on top. Sprinkle a
little paprika for color. Bake uncovered at 350 deg.
for about one hour.
