Ingredients
1.5 pounds of raw Turkey per person - 1 Kg = 2.2 pounds
8.7 kg turkey = 19.18 pounds (using this size of turkey)
7 hours of cooking in the Costco roaster. It will be well done before then but can continue to cook
start at 450 degrees for half hour and then drop temperature 325 degrees for the rest of the time
Cover the stuffing with tinfoil so it doesn't over cook. Put tin foil underneath the stuffing part
You don't want the stuffing to drop into the bottom of the pan with the drippings.
I put a few holes in the tin foil in the corner of the pan so drippings can drip out.
Only put tin foil at the bottom where the stuffing is located.
Cook the Turkey thawed. Wash the cavity out and salt inside before putting in the stuffing.
 
Cook the whole time with the stuffing in the cavity and around the opening of the turkey.
Place the thermometer so you can see it from the lid window of the Costco roaster
Place the thermometer through the breast just off centre and into the centre of the stuffing.
At the 7 hour mark it should be well well done and then take the turkey out and remove the stuffing.
Cover the stuffing with tinfoil and blanket and let sit for an hour till time to carve the turkey.
Keep the stuffing well cover in tinfoil and a blanket.
2023 I ordered a 28 lb turkey from the hutterites. 28 lbs is the max imum size of turkey
to fit the roaster.
