     Chicken - Lemon chicken romano

2 eggs
12 tsp oregano
2 tsp lemon zest
salt and pepper to taste
1 Cup plain panko breadcrumbs
1/4 Cup pecorino Romano cheese, grated
2 Tbl. flour
oil for frying
1 lb. boneless chicken breast, pounded thin
1 Cup mozzarella, shredded

Preheat oven to 350 deg. Mix eggs, oregano, lemon zest and salt and pepper in a wide bowl.
Mix the breadcrumbs and romano cheese in another bowl. Heat the oil over medium heat. Dust the chicken in flour, dip in egg mixture, then into breadcrumbs. Cook chicken in oil until golden brown on both sides and place in a baking dish.
Sprinkle on the mozzarella and bake until cheese has melted, about 10-15 minutes.
