* slice top garlic bulbs, place in oven proof dish, bake at 350 degrees until soft, approximately half an hour. Remove from even and let cool
* Drain and rinse chickpeas,drain thoroughly, place in food processor. add water, lemon juice, olive oil, tahini, salt and pepper
* using a butter knife, press on garlic bulb until garlic is squeezed from all cloves, add to other ingredients in food processor.
* process until smooth and creamy, scrape down sides of bowl if necessary. for a smoother or softer texture, add small amounts of lemon juice and olice oil until desired consitency. stir in chopped parsley
