     Baked Pasta and Leeks with Anchovy cream

Ingredients
1 lb short pasta, such as rigatoni or penne
1/4 C olive oil
kosher salt
3 large leeks about 1 1/2 lbs white and pale green parts onlyk
trimmed and sliced into 1/2 inch thick pieces
1 2oz tim of anchovies, drained
1 large tbl minced garlic
1 tsp red pepper flakes
 
fresh ground black pepper
2 C heavy cream
1/2 C grated cheese plus more for top
1 10 oz bag frozen baby peas thawed and drained

Instructions
Preheat oven to 400. Cook pasta in large pot of salted water until just slightly tender. very al dente.. Drain and set aside
Heat oil in a large high sided pan over medium heat. Add leeks and season with a little salt. Cover and cook, stirring occasionally until broken up and tender about 8 minutes. Uncover and add anchovies, garlic, red pepper, and several grinds of black pepper, Cook stirring occasionally until anchovies are melted and garlic is tender. Add cream and 1/2 C grated cheese. Bring to a simmer.
Add peas and 1/2 tsp salt. Toss sauce with pasta and pour into 9 by 9 pan, top with grated cheese and bake 25-30 minutes DELICIOUS
