Heat oil in a large high sided pan over medium
heat. Add leeks and season with a little salt.
Cover and cook, stirring occasionally until broken
up and tender about 8 minutes. Uncover and add
anchovies, garlic, red pepper, and several grinds
of black pepper, Cook stirring occasionally until
anchovies are melted and garlic is tender. Add
cream and 1/2 C grated cheese. Bring to a simmer.
