Marinate pork in dressing, at least 30 minutes,
preferably overnight.
Preheat oven to 350. Remove pork from marinade and
discard marinade. Pat dry and season well with salt
and pepper. Heat 2 Tbsp. butter in large heavy pan.
Brown pork on all sides, about 2 minutes per side.
Then add to roasting pan or baking sheet.
Melt rest of butter in pan, combine onion, garlic,
and herbs. Heat 30 seconds and remove from heat.
Halve potatoes. Pat dry and zap in mike for a bit to
pre-cook. Arrange around pork in pan. Drizzle butter
and herbs over pork and potatoes.
Roast, checking temperature after 20 minutes. When
pork reaches 140 degrees, remove from oven, and let
rest for 10 minutes before slicing.
