     Green tomato cobbler

Ingredients
Tomato bottom
6 medium firm, unripe green tomatoes
1 and 1/2 c packed light brown sugar
1/2 c all purpose flour
2 tsp ground cinnamon
1/2 tsp kosher salt
2 Tbsp apple cider vinegar
Crumb topping
1 and 1/2 c granulated sugar
 
2 c flour
2 tsp baking powder
2 pinches kosher salt
1 c melted butter
2 tsp vanilla

Instructions
Preheat oven to 350 degrees. Core tops and bottoms of tomatoes. Cut them in half across the middle. Using a finger or handle of a spoon, scoop out and remove seeds, as many as you can. A few left behind will not matter much. Cut them in half again and then slice like apples into a large bowl.
In medium bowl, place brown sugar, flour, cinnamon, and salt. Mix thoroughly. Sprinkle tomatoes in large bowl with cider vinegar and add the brown sugar mixture. Stir well to coat. Evenly spread tomato mixture into a 9X13 baking dish.
In another medium bowl, combine dry topping ingredients, then add melted butter and vanilla. Mix until holding together and crumbly. Sprinkle topping over tomatoes evenly with handfuls of topping.
Place baking dish in oven and bake 50 to 60 minutes, topping should be slightly browning and filling bubbling thru the topping in spots. Serve warm with vanilla icecream.
