     curried pumpkin soup

Ingredients
8 cups peeled and cubed pumpkin or winter squash
1/2 leeks, sliced
1 onion, chopped
2 tbsp. butter
1/2 tbsp. curry powder
1/2 tsp. ground coriander
2 cans chicken broth (14.5 oz)
1/2 cup half and half or cream
salt and peper to taste
 

Instructions
* melt butter in soup pot, saute onions and leek. and curry powder and ground coriander, saute foew minutes longer.
* add chicken broth, cook 30 minutes or until pumpkin is soft. puree or mash.
* add 1/2 cup half & half or cream and more chicken broth if needed to think. add salt & pepper to taste
Serving Suggestions
good hto or cold! good topped with croutons (hot soup) or yogurt (cold soup) or toasted almonds, ect.
