     Coconut Shrimp

Ingredients
1 cup angel flake coconut
1/4 cup flour
1 tsp salt
1/8 tsp black pepper
1# shrimp
1 egg beaten
oil for frying
 

Instructions
Heat oil in deep fryer until 325F. Beat egg with water and put in one dish. Mix flour, salt, pepper and coconut in another dish. Clean and pat dry shrimp. Dip shrimp in beaten egg and then in flour mix. Lay on wax paper on cookie sheet and refrigerate 30 min. Deep fry until golden brown, drain on paper towels.
Serving Suggestions
Serve with orange marmelade.
