     Baked Onion Flowers

Ingredients
Sweet onions - 1 onion per 2 people - halved crosswise so the rings are intact
Salt and pepper
Melted butter or spray oil
 

Instructions
Preheat oven to 425 with a rack in the top position. Cut the onions - if the tops and bottoms are the north and south poles, cut at the largest point in the middle - or the equator.
Place the onion halves cut-side up in the cups of a 12-cup muffin tin. Spray with oil. Sprinkle the onions with the salt and pepper. Roast for 20 minutes, until the onions have softened slightly and sunk into the cups. Brush with the butter and return to the oven. Bake until extremely soft and golden brown, about 20 minutes more.
If you don’t have a muffin tin, you can use a shallow baking dish making sure they are touching and securely sitting.
