     Mulino's Mussels Parmigiano

Ingredients
2 lbs. fresh mussels
1/2 cup white wine
1/4 cup lemon juice
3 tbs chopped garlic, from jar
1 tbs butter
1 cup shredded parmesan cheese
 

Instructions
Rinse mussels thoroughly and set aside. Using a 2- cup measuring cup add first the wine, followed by lemon juice, then add the garlic and butter. Pour the mix into a 12-inch cast iron skillet followed by the mussels.
Cover and steam on stovetop until the mussels open, approximately 10 to 12 minutes after liquid starts to boil. Turn off heat, Remove the cover and sprinkle the cheese over the cooked mussels, trying to get the cheese into as many of the mussels as practical. Place the skillet in a boiler and broil until cheese starts to melt and shells just start to brown, approximately 5 minutes.
Plate the mussels into 4 servings and ladle the remining sauce over the servings. This should result in a generous topping of garlic over the servings. You can sprinkle some additional parmesan over each serving if you like.
Serve with garlic bread to dip in the sauce. Reverse engineered from Mulino'e restaurant appetizer, Cozze Parmigiano.
