     Salad - Blackened Chicken Caesar

Ingredients
Caesar Dresing -
1 large garlic clove
4-6 Anchovies
2 Tbl. fresh lemon juice (1 lemon approximately)
1 tsp. digon mustard
1/2 tsp. sea salt and pepper
1/2 Cup shredded Parmesan
1/4 Cup VOO
Blackened Seasoning -
 
2 Tbl. ground smoked paprika
1 tsp. pepper
1 tsp. each onion powder, garlic powder, ground cayenne pepper
1/2 tsp. dried oregano
2 tsp. sea salt
For the salad =
1 Boneless chicken breast
Romaine lettuce
Shaved Parmesan, Croutons or crusty bread

Instructions
In a small food processor add all caesar dressing ingredients and blend until smooth. Set aside.
Preheat grill to 350 to 400 deg. Mix all of the the Blackened Seasonings together and rub over the outside of the chicken. Cook chicken 8 to 10 minutes on the grill or until 165 deg. internally. Prepare the salad.
NOTE- We sliced the chicken breast after coating it, added a little more spice, then grilled the slices. Worked out great.
