     Fresh Garden Salsa, work in progress

Ingredients
Following makes approx 12 cups pepper mix-
10 cups red onions
2 cans tomato paste (total of 12 ounces)
2 green peppers
2 red peppers
10 cloves garlic
8 tsp pickling salt (You may want to add a little at a time)
1 cup white vinegar
Personal Preference, Add- lots of Hot Pepper to pepper mix
 
19 cups chopped fresh peeled garden tomatoes
cilantro is an additional option if you like it.
also may want to try adding some chili powder, and or cumin

Instructions
Clean and chop all pepper mix ingredients and measure quantity. Add more peppers and onions to bring up to 12 cups if necessary.
Loosen tomato peels by dropping the whole tomatoes into boiling water for a minute. Drop in cold water and Finish peeling. Chop.
Mix the pepper mix with tomatoes. Taste. Heat to a boil and simmer 20 minutes. Stir often. You can either freeze this salsa or can in jars.
