     Chicken and Waffles with honey butter sauce

Ingredients
6 boneless chicken breast cut into strips
vegetable oil for deep frying
Buttermilk Brine
2C buttermilk, 1 tbl kosher salt
1/2 tbll garlic and onion powder
1 tbl hot sauce
1 tsp smoked paprika
Seasoned flour crust
3 C all purpose flour
 
1/3 C cornstarch
2 tsp baking powder, onion powder,kosher salt
2 tsp black pepper
Spicy honey butter sauce
1/2 C honey
8 tbl unsalted butter
1/2 tsp chili powder
1 tsp kosher salt
Belgium waffle recipe

Instructions
Whisk the buttermilk, salt garlic powder, onion powder, hot sauce and smoked paprika together in a bowl. Add the chicken strip and cover, marinate overnight In a dutch oven pot heat up about half the pot with vegetable oil to about 350 degrees. While the oil is heating whisk together flour, cornstarch, baking powder, and seasonings. Take each chicken strip from brine and dredge into the seasoned flour. Thoroughly coat the chicken all over then let rest on a plate for 5 minutes before frying. Fry the chicken in the hot oil until golden brown, crispy and cooked through about 8-9 min
Cool chicken on a wire rack . Make the belgian waffles and serve the chicken on top of the waffles, then drizzle generously with spicy honey butter sauce
Spicy honey butter sauce. In a small saucepan, melt butter over medium heat with honey, chili powder and salt. Whisk well until the mixture is incorporated and homogenized. Keep warm to serve
