     Mexican-Style Pinto Beans and Rice

Ingredients
Small onion, chopped
4 pieces ready-cook bacon
1 tsp jarred garlic
1 19oz can pinto beans
1/2-28oz can tomatoes (14oz)
1/2 can green chilies
3/4 tsp Chili powder
3/4 tsp cumin
1/4 tsp garlic powder
 
Handful cilantro
Salt to taste
1/2 cup rice
7/8 cup water
3/4 tsp chicken oxo
1/4 jalapeño diced small

Instructions
Turn Instant pot to sauté function. Cook bacon stirring occasionally. Add onion and sauté. When almost done add fresh garlic and stir together.
Cancel sauté setting. Add tomatoes, beans, Chili peppers, spices, cilantro and jalapeño. Mix in rice, water and oxo.
Cook on High pressure for 7 minutes and then Natural release for about 14 minutes before venting.
Serving Suggestions
Serve on a bed of lettuce, with chips crumbled on top (or used to scoop) and cilantro lime dressing. Delicious!
