Place the butter in pan and cook until melted and
hot. Butter must be hot to get the eggs to emulsify.
Add the egg yolks, 1 tbl hot water, chipotle pepper,
ketchup, salt, sugar and lemon juice to the blender.
Blend for 10 seconds till it is well combined
Keep the blender running on medium and slowly stream
melted hot butter into the mixture. Blend for
another 30-45 seconds. If the hollandaise is too
thick slowly drizzle in another tbl of hot water
I use this over a california eggs benedict. Bisguit
topped with avacado, poached egg and sauce
