In a mixing bowl add yogurt, garlic, and herbs. Stir to combine.
Squeeze as much water as possible from the shredded cucumber
and add to the yogurt bowl. Add a healthy drizzle of olive oil and
salt and pepper to taste.
Serve with pita, or other bread or raw vegetables. Will keep in the
fridge for a few days— the garlic flavor will intensify with time.
