     Vietnamese Style Grilled Mussels

Ingredients
1 pound of mussels, half-shelled and cleaned
1/2 cup Cham Dipping Sauce
1/4 cup scallion oil or chopped fresh scallions
1/4 cup fried shallots
4 ounces roasted unsalted peanuts
 

Instructions
Preheat the oven to 425 degrees. Can also grill mussels.
Top mussels with 1 ts of cham and scallion oil or scallions. Bake or grill mussels for 5 to 7 minutes until the juices start bubbling. Remove mussels and put them on a plate. Sprinkle on crushed peanuts and fried shallots.
