     Ham and Cheese Panini

Ingredients
2 (1/2 inch thick) slices crusty bread
1 tbsp mayo
1/2 cup shredded cheddar cheese (2oz)
1 slice deli ham or 1 serving lunch ham
4-6 pickle chips
 

Instructions
1. Place bread slices on cutting board. Use butter knife to spread mayo evenly over 1 side of each slice of bread. 2. Flip 1 slice over (mayo side down) in a non-stick skillet. Sprinkle evenly with half the cheese.
3. Place ham, pickle chips, and remaining cheese on top and cover with other slice of bread - mayo on the outside. 4. Heat skillet over medium heat and cook until bread is golden brown on the bottom, about 4 minutes.
5. Use spatula to flip sandwich over. Place saucepan lid on sandwich and press down firmly, then leave lid in place. 6. Cook until second side is golden brown and cheese is melted - 1-2 minutes
7. Turn off heat, transfer sandwich to cutting board to cut in half. 8. Enjoy!
