     Roasted Cauliflower

Ingredients
1 head cauliflower - about 2 pounds
3 tbsp extra-virgin olive oil
3/4 tsp kosher salt
1/4 tsp pepper
2 tbsp grated parmesan cheese
 

Instructions
1. Adjust oven rack to lowest position and heat oven to 450 degrees. 2. Line rimmed baking sheet with aluminum foil. 3. Pull and snap off outer leaves of cauliflower and cut into 8 wedges.
4. Put wedges on baking sheet. 5. Drizzle 2 tbsp oil over wedges; sprinkle with salt and pepper. 6. Toss cauliflower to make sure it's evenly coated. 7. Spread wedges into even layer.
8. Cover baking sheet tightly with aluminum foil. Place baking sheet in oven for 15 minutes. 9. Remove the foil and flip wedges over using tongs. 10. Continue roasting for 12-18 minutes or until deep golden brown.
11. Let cauliflower cool for 5 minutes. 12. Drizzle with remaining oil and parmesan. 13. Enjoy!
