     Rice - Slow Cooker Mexican Rice

Ingredients
1 Cup short grain white rice
1 Cup chicken stock
1 Cup tomato sauce
1/2 Cup canned diced tomatoes with green chilis
4 oz. can green chilies, diced
1/2 jalapeno, diced and deseeded
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. cumin
 
1/2 tsp chili powder
1/2 tsp. oregano
fresh cilantro, for garnish
sliced limes, for garnish

Instructions
Spray non-stock cooking spray all around your slow cooker crock. Place the rice, chicken stock, tomato sauce, diced tomatoes, diced green chilis, jallapeno, salt, pepper, cumin, and oregano into a 2 or 3 quart slow cooker.
Cook on high for 2-1/2 hours, or low for 5 hours. May have a little bite.
Garnish with cilantro and lime. We really like this rice. Easy to make and very flavorful.
