     Instapot Pesto Tomato Tortellini Soup

Ingredients
1 (28oz) can crushed tomatoes
1 (28oz) can diced tomatoes
1 (28oz) can tomato sauce
1 medium yellow onion, diced
3 cloves garlic, minced
2 tbsp olive oil
1 1/2 C chicken broth
1 C cream or half and half
1 lbs refrigerated tortellini
 
1 lbs chopped frozen spinach, thawed and drained
3 heaping tablespoons store bought pesto, plus more for serving

Instructions
Add onion, garlic, chicken broth, pesto and the three types of tomatoes. Seal your Instapot and hit the Soup button. Reduce time to 20 minutes.
Once 20 minutes is up, do a quick release and open the pot. Turn pot on saute and let soup come to a roiling boil. Add spinach and tortellinis. Cook 2- 3 minutes or until tortellini are tender, stirring frequently. Add cream or half and half. Season with salt and pepper to taste. Serve immediately.
