     Creamy Tomato Soup- no dairy

Ingredients
3 garlic cloves, unpeeled
4 med fresh tomatoes
1 small yellow onion, quartered
14 oz can diced tomatoes
1/2 c cooked garbanzo
1 T balsamic vinegar
1/2 tsp maple syrup or sugar
2 tsp fresh thyme leaves
1 T olive oil
 
1/4 tsp red pepper flakes
1/2 tsp salt
pepper

Instructions
Roast garlic, tomatoes and onion drizzled with olive oil about 20 min til brown.....peel garlic after roasting. Place all in blender or use immersion blender. I simmered the soup. Serve with croutons
Croutons- sprinkle 4 slices bread with mozzarella. Top with remaining bread slices to make sandwiches. Drizzle with olive oil. Bake about 8 min till cheeses melted and bread golden brown. Cool and cut into croutons.
