     Spinach Immunity Soup

Ingredients
1 yellow onion
1 russet potato
4 cloves garlic
8 scallions (one bundle)
16 oz fresh spinach (one bundle)
1 tsp salt
1 tsp black pepper
4 cups chicken broth
1/4 cup cream (or half and half)
 
(OPTIONAL) chicken, precooked and shredded/cubed

Instructions
Set yourop Instant Pot to Saute and preheat. Then add potatoes and onions for 2-3 minutes. Add scallions and garlic for 2-3 minutes
Add half the spinach and allow to wilt (2 minutees) and stir in 2 cups of broth. Once combined, repeat the process with the remaining spinach and broth.
Once combined and heated through. Secure the lid for pressure cooking. You'll cancel the SAUTE and then choose pressure cook for 12 minutes.
After 12 minutes under pressure cooking, manually release the steam (carefully) and then use an immersion blender to blend all veggies together. Finish with cream and chicken.
