3 gala or golden delicious apples, core and quartered
3 15-oz can pumpkin puree (not pumpkin pie filling)
4-5 cups veggie broth (enough to cover vegetables)
1.5 tsp salt
1/2 tsp cinnamon
1/2 tsp black pepper
1/8 tsp ginger
1/2 tsp pumpkin pie spice
2 tbsp maple syrup
savory granola (see recipe)
Instructions
In a large soup pot or dutch oven combine leeks,
pumpkin, apples, sweet potatoes. Pour over 4 cups of
broth, adding up to one additional cup if needed.
Vegetables should be covered.
Bring to the boil. Add salt and spices, then stir.
Cover pot, lower the heat, and simmer for about 30
minutes or until the sweet potatoes and apples are
tender.
Let soup cool 10 minutes. Use an immersion blender
to puree the soup. Add maple syrup and simmer an
additional 10 minutes.
