     Plantain crusted chicken fingers

Ingredients
cooking spray
2 large eggs
1/4 C flour
1 5oz bag plantain chips, crushed
3 boneless chicken breasts cut into strips
1/3 C cariibbean mango marinade
4 tbl mayo or miracle whip
 

Instructions
Dipping sauce.. mix mayo and mango marinade and set aside to serve with chicken.
Heat oven to 425. Place a wire rack inside a large rimmed baking sheet lined with parchment paper. Spray rack with cooking spray.
In a shallow dish, whisk eggs and season with salt and pepper. To another dish add flour and season with salt and pepper. To third dish put crushed plantain chips Dredge chicken strips in flour, dip in egg and then coat with plantain chips. press in chips. Arrange on wire rack about 2 inches apart. Spray with cooking spray and season with salt and pepper bake 20-25 minutes. Serve with dipping sauce
