     Miss Van's Creole Chicken Soup

Ingredients
2 lbs raw chicken breast or 4 thighs or half of chicken
1 onion medium or 2 tablespoons of onion powder
1 medium bell pepper
4 bay leaves
2 cups of celery
1 small cabbage (frozen or fresh)
2 carrots (frozen or fresh)
2 tablespoons garlic powder - or 1 or 2 cloves
3 pieces of rosemary
 
2 tablespoons Creole seasoning
1 teaspoon of ground coriander
1 teaspoon crushed oregano
1 tablespoon basil
1 chicken bullion cube
1 pinch of crab boil spice
1 pack of Lipton onion soup pack
1 or 2 large potatoes (optional - to make hearty)
1 cup of coffee - 2 tablespoons of flour and cold water

Instructions
In half a pot of water, put all ingredients in and cover the pot. When the chicken is done cooking, pull it out to shred the chicken. Put all the meat back into the pot.
In a separate bowl, combine 1 cup of coffee and 2 tablespoons of flour. If your mixture is lumpy, add cold water and stir until the mixture is loose. Pour into the pot of soup to thicken.
Taste check and add seasoning to taste!
