     Carne Adovada (Instant Pot)

Ingredients
2 lbs pork shoulder/butt (1 inch cubes)
2 tbs cornstarch
2 tbs oil (olive or canola)
14 oz frozen red chile puree (bueno)
menudo mix (oregano, cumin, coriander, onion powder, garlic powder, salt)
1/2 tsp oregano
1/2 tsp cumin
1 onion, diced
1 tsp salt
 

Instructions
Coat cubed pork with cornstarch, cumin and oregano. Add oil to slow cooker and set to SAUTE. When oil is hot, add pork in batches to brown (approx 1-2 min per batch).
RED CHILE SAUCE- In saucepan, heat red chile puree, add 1/2 tsp each oregano, cumin, onion powder, garlic powder, heavy pinch of coriander and salt). Simmer for 15 minutes. Reserve one cup for this recipe
After browning pork, add 1 cup red chile sauce, diced onion and salt. Lock lid and pressure cook for 20 minutes. Let it release naturally.
Serving Suggestions
serve topped with shredded cheese and warm corn tortillas on the side
