     Gluten Free Sopaipillas

Ingredients
1 1/2 cups bobs red mill gluten free flour (includes xantham gum)
3/4 cup lukewarm water
3 tsp melted manteca lard
3 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla extract
1/2 tsp sugar
 

Instructions
Whisk together dry ingredients (flour, baking powder, salt). Make a well and add in melted lard, vanilla, sugar. Mix with a fork to blend and slowly add water while mixing. Should look like wet cookie dough when properly mixed
Form dough into a ball and divide into 3 smaller balls. Roll out each ball between sheets of wax paper to make a 10-inch square shape (to tortilla thin), then use a sharp knife and cut into quads.
Heat 2 inches of canola oil or lard in heavy pan to 400 degrees (smoking). Squares should puff up quickly. Then cook 30-45 seconds on each side (Golden Brown Deliciosa)
Serving Suggestions
serve with honey or stuff with carne adovada
