     Pumpkin Roll

6 eggs
2 cups sugar
1 can pumpkin
2 tsp lemon juice
1 1/2 cup flour
2 tsp baking powder
4 tsp cinnamon
2 tsp ginger
1 tsp nutmeg
1 tsp salt
2 cup powdered sugar
12 oz. cream cheese
8 tbsp butter
1 tsp vanilla

Beat first 4 ingredients together for 5 minutes. Next, stir together the dry ingredients and fold pumpkin mixture into it.
Spread mixture into a greased and floured big cookie sheet. Bake at 375 degrees for 15 minutes. Turn out onto a towel, sprinkle with powdered sugar and roll towel and cake. Let cool and unroll.
Beat filling ingredients. Unroll cooled cake and spread filling over cake. Then roll cake again and chill. This freezes well.
